Insomniac was born on a summer's day in 2021. After years of eating Texas Barbecue in local restaurants, I wanted to learn the "secrets" of how the best pitmasters do it. So, I did what we all do now-a-days, I went to the internet and YouTube to learn all I could, bought a smoker and some post oak. The first thing I realized is that there is no substitution for high-quality ingredients, delicious recipes, time and lots of TLC. Many many hours and sleepless nights tending to fires and tweaking recipes brought me to this!
Texas Barbecue doesn't just mean one thing. It's as big as the state, and there are endless ways to do it and do it right. We believe that eating isn't just about feeding your body, it's about bringing people together. Sharing a table for those special events in life and using food to make the memories that last a lifetime. We strive to make sure every meat that we smoke not only satisfies your tastebuds but can create those memories with family, friends or someone for the first time. Tender, savory, sweet, juicy, and satisfying.
My name is Jeremy, and I spend hours and hours a night around the pit. It's my hobby, past-time and favorite obsession. For me, Texas barbecue is a way of life and an edible form of art. There is something special about barbecue. You can't cut corners or rush it, without it being noticeable in the final product. And sometimes, you can try to tweak the tried and true, spend all night over the pit, tending to the fires, just to find out it wasn't worth messing with.....
